  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil (for grilling)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together soy sauce, mirin, sake (if using), and sugar until the sugar dissolves. This mixture will flavor your beef and give it that signature teriyaki glaze.
  2. Marinate the Beef: Place the beef slices in the marinade, ensuring each piece is well-coated. Let them marinate for at least 30 minutes in the refrigerator to absorb the flavors.
  3. Prep the Scallions: While the beef marinates, blanch the scallions in boiling water for about 30 seconds. Then, quickly transfer them to ice water to stop the cooking process. This step makes the scallions more pliable and less pungent.
  4. Assemble the Rolls: Take a slice of marinated beef, lay a few pieces of scallion at one end, and roll it up tightly. Secure the roll with a toothpick or skewer. Repeat with the remaining beef and scallions.
  5. Cook the Negimaki: Heat a grill pan or skillet over medium-high heat and brush with vegetable oil. Place the beef rolls on the grill, turning occasionally, until the beef is cooked through and the outside is nicely caramelized, about 8-10 minutes.
