Ingredients

  • 4 boneless chicken thighs
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 thumb ginger, sliced
  • 4 cloves garlic, minced
  • Salt and white pepper
  • Vegetable oil for frying

For the Marinade:

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp white pepper

For the Coating:

  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • Salt to taste

For the Chili Sauce:

  • 2 red chili peppers
  • 4 cloves garlic
  • 1 thumb ginger
  • 1 tbsp white vinegar
  • 1 tsp sugar
  • Salt to taste

For the Soup:

  • Chicken bones (from the thighs)
  • 5 cups water
  • 1 thumb ginger, sliced
  • 2 spring onions
  • Salt to taste

Instructions

  1. Marinate the Chicken:
    • Combine soy sauce, oyster sauce, sesame oil, and pepper in a bowl.
    • Add chicken thighs, coat well, and let marinate for 30 minutes.
  2. Prepare the Rice:
    • Rinse jasmine rice until water runs clear.
    • In a pot, sauté half of the minced garlic and ginger until fragrant.
    • Add rice, stir to coat with garlic and ginger, then add chicken broth.
    • Bring to boil, cover, and simmer until rice is fluffy.
  3. Make the Soup:
    • Boil chicken bones in water with ginger and spring onions.
    • Simmer for an hour, then season with salt.
    • Strain to get a clear broth.
  4. Prepare the Chili Sauce:
    • Blend chili peppers, garlic, ginger, vinegar, sugar, and salt until smooth.
  5. Fry the Chicken:
    • Mix flour, cornstarch, baking powder, and salt for the coating.
    • Heat oil in a pan.
    • Dredge marinated chicken in dry mix, shake off excess, and fry until golden.
  6. Assemble the Dish:
    • Slice fried chicken.
    • Mould rice into shape on plates.
    • Serve with soup, chili sauce, and sliced cucumber.
